Citrus Soy Salmon over Wilted Spinach and Honey Gingered Carrots

If you were to find this meal in a fancy food magazine, on a cooking show, or in a trendy upscale restaurant it would be called ‘Roasted Salmon with a Citrus Soy Reduction’.  Sounds so complicated and fancy; but it’s really very simple and packed with flavor.

Coconut-Lime Beurre Blanc Scallops with Snap Peas

Hands down the winner of the week (at least for me)! Seared scallops are incredible; crisp edges with a sweet almost creamy inside. So, delicious. If you are not a fan of scallops or cannot find them at your grocer, consider using shrimp or cubed salmon. Paired with the coconut-lime beurre blanc any choice is a good one.

Paprika Cod with Fingerling Potatoes Chorizo and Mexican Creamed Corn

If you only make one thing this week, let it be this!! Lightly seasoned flaky fish, deeply spiced chorizo, fresh poblano and corn, and cream potatoes. A medley of fresh flavors that work incredibly well together.

Tilapia Tacos with Avocado Crema and Cowboy Beans

Love. Love. Love the flavors in these tacos. A bite of warm smokey tilapia and crunchy bell pepper with a bit of cold refreshing avocado creama. Bam! That’s right out of a trendy taco stand! Oh and the beans. They are fantastic. I usually make a double batch for easy burritos on the weekend.

Citrus Sesame Sword Fish, Asian Broccoli Slaw, and Brown Rice

I’ve been told by my family that I cook too many Asian meals. I refuse to agree! And thankfully so because this is not only a very healthy flavorful meal, but one that is a breeze to get on the table. The marinade is full of flavor and is great with this type of fish.
