KID NOTE: My kids are not big fans of kale, but this version was much more palatable for them; maybe it was the soy sauce. They loved the pork chops and did great with the sweet potatoes.
VEGETARIAN TIP: Skip the pork. Add mushrooms to the kale.
GLUTEN MODIFICATIONS: Use tamari in place of soy sauce.
FANTASTIC Meal! Kids loved it.
To speed things up, I microwaved the potatoes for 5 minutes while the oven was warming up. I then brushed them in olive oil and placed them in the oven to finish while I cooked the rest.
