Oh my! How just a few ingredients can result in such an amazing flavor explosion is unbelievable! The light crispy coating on the pork is perfectly savory and fantastic with the tender crunch of the kale. And paired with the naturally subtle sweetness of the sweet potato - so darn delicious!

Baked Sweet Potatoes

INGREDIENTS

  • 4 sweet potato
  • 2 tablespoons olive oil
  • 4 tablespoons butter, optional
  • 4 tablespoons sour cream, optional
  • 1 green onion, sliced, optional

DIRECTIONS

  1. Preheat oven to 425.
  2. Rub potatoes with olive oil, poke with a fork twice on each side, and place on a foil lined rimmed baking sheet.
  3. Bake for 45 minutes to an hour depending on the size.
  4. Garnish as desired.

Crispy Pork Chops and Kale

INGREDIENTS

  • 1 1/2 pounds pork chops
  • 3 tablespoon low sodium soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 1 head kale, stems removed and finely chopped
  • 2 cloves garlic, minced or pressed
  • 1/4 cup dry white wine
  • 1 tablespoon low sodium soy sauce

DIRECTIONS

  1. Combine soy sauce and cornstarch in a shallow dish.
  2. Toss pork chops in the mixture until well coated.
  3. Heat olive oil in a skillet over medium high heat until it begins to shimmer.
  4. Add chops and cook 3-4 minutes per side, or until nicely browned and at least 150 degrees in the center. Cook time will depend on thickness. A little pink in the center is good.
  5. Transfer chops to a plate and tent to keep warm.
  6. Add a bit more oil to the skillet if necessary.
  7. Toss kale and garlic in oil for a 2-3 minutes to brown just a bit.
  8. Pour in wine, stir to combine, cover and let cook about 5 minutes.
  9. Uncover, add soy sauce, and stir until liquid is almost completely evaporated.
  10. Serve chops topped with kale.

NOTES

KID NOTE: My kids are not big fans of kale, but this version was much more palatable for them; maybe it was the soy sauce. They loved the pork chops and did great with the sweet potatoes.

VEGETARIAN TIP: Skip the pork. Add mushrooms to the kale.

GLUTEN MODIFICATIONS: Use tamari in place of soy sauce.

    FANTASTIC Meal! Kids loved it.
    To speed things up, I microwaved the potatoes for 5 minutes while the oven was warming up. I then brushed them in olive oil and placed them in the oven to finish while I cooked the rest.
