Impress your guests this weekend with these little beauties. And, they are as delicious as they are gorgeous! The meatballs are super simple to make, especially with the help of a food scoop. Make everything ahead then simply reheat the meatballs in a lidded microwave safe bowl with a bit of chicken stock to keep them moist.

Bahn Mi Meatball Skewers



  • 1 pound ground chicken
  • 2 tablespoons low sodium soy sauce
  • 2 green onion, chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 tablespoon Sriracha, optional
  • 2 teaspoons cornstarch
  • 1 tablespoon olive oil
  • 1 cucumber, cut into rounds
  • 1/2 cup radish, cut into rounds
  • 2/3 cup mayonnaise
  • 2 tablespoons Sriracha
  • 1 teaspoon lemon juice
  • toothpicks


  1. Combine chicken, soy sauce, green onions, salt, pepper, Sriracha, and cornstarch.
  2. Heat 1T oil in a skillet over medium high. Add meatballs and cook for 10-12 minutes, browning on all sides.
  3. While the meatballs cook, place the cucumber rounds on a serving dish and top with 2-3 radish rounds.
  4. Combine mayonnaise, Sriracha, and lemon juice in a small bowl. Transfer to a condiment bottle (if you have one) and set aside.
  5. Place a meatball on top of each cucumber-radish stack, drizzle with Sriracha-Mayo, and skewer with a toothpick.

    The meatballs and the Sriracha mayo was delicious! The cucumber and radish rounds wanted to slide off the meatball even with the toothpick. The next time I’ll set everything in a romaine lettuce cup..
