The combination of tangy stir fried chicken and a little fresh basil is a flavor explosion. Serve over white rice, brown rice, rice noodles, or in this case soba noodles. Noodles speeds up the cooking process and gets the meal on the table in minutes. You may notice that the snap peas are missing from this photo. I cooked the entire meal and then realized they were still in the fridge! They eventually made it on the plate.  

Basil Chicken Soba Noodle Bowl

INGREDIENTS

  • 1 1/2 lbs boneless skinless chicken breasts
  • kosher salt
  • pepper
  • 1/2 red bell pepper, sliced
  • 2 cups snap peas, halved
  • 2 teaspoons olive oil
  • 1/4 cups shallot, minced
  • 4 cloves garlic, thinly sliced
  • 2 tablespoons fish sauce
  • 1/4 cup sugar, or honey
  • 1/4 cup low sodium soy sauce
  • 2 teaspoons chile garlic sauce
  • 2 teaspoons water
  • 1 teaspoon cornstarch
  • 1/4 teaspoon kosher salt
  • 1/4 cup fresh basil
  • 8 oz soba noodles

DIRECTIONS

  1. Cut chicken into 1” pieces and season lightly with salt and pepper.
  2. Heat oil in a large skillet over medium high heat until it begins to shimmer.
  3. Add shallot and garlic and sauté until very lightly browned.
  4. Add chicken, bell pepper, and snap peas and sauté until chicken is just cooked through – about 8-10 minutes. Do not overcook or your chicken will be dry and tough.
  5. While chicken is cooking, combine the remaining ingredients (except the basil) in a small bowl to make the sauce.
  6. You can also prepare the soba noodles while the chicken is cooking. Follow the package directions. Typically they boil for about 5 minutes.
  7. Once the chicken is mostly cooked, add the sauce to the pan, heat through, and stir to combine and thicken.
  8. Plate noodles in 4 shallow bowls, top with chicken, and a sprinkling of basil leaves.

NOTES

KID NOTE: After they picked off all the basil, they loved the chicken. I was informed, however, that they do not like soba noodles and would rather have had rice or rice noodles.

VEGETARIAN TIP: Replace the chicken with firm tofu. Consider also adding cauliflower.

GLUTEN MODIFICATIONS: Make sure you use gluten free soy sauce and either rice or rice noodles instead of soba noodles.

    Where do you find snap peas? I’ve never seen them fresh or frozen.

      I find them fresh in the produce department. Sometimes they are packaged. If you can’t find them, snow peas are a great substitute.
