KID NOTE: The kids did really well with this meal. I chose a mild andouille sausage and put extra Cajun seasoning on the table for my husband and I to increase the spice level.
VEGETARIAN TIP: Add sliced okra, zucchini, and tomatoes. Use vegetable broth.
GLUTEN FREE MODIFICATIONS: Skip the bread. Make sure your Cajun seasoning is gluten free and use rice flour instead of all purpose flour.
I haven’t tasted this yet, it looks and smells delicious! However, it is very thin, almost soup like. Is that the correct consistency for Gumbo?
