This is a great traditional gumbo with nice subtle flavors that appeal to everyone. And it’s easy to kick up the spice for those that like a little heat by adding a little more Cajun seasoning at at the table. If you can’t find or don’t want to use Andouille sausage try kielbasa. Or completely mix things up and use shrimp. There are lots of choices and every one of them is great!  

Chicken and Andouille Gumbo



  • 1 lb andouille sausage, cut into 1/4-inch-thick slices
  • 2-3 tablespoons olive oil
  • 1 onion, coarsely chopped
  • 1 red bell pepper, coarsely chopped
  • 1 cup celery, thinly sliced
  • 2 cloves garlic, minced or pressed
  • 1/4 cup all-purpose flour
  • 2 teaspoons cajun seasoning
  • 1/8 teaspoon ground red pepper, optional
  • 6 cups chicken stock
  • 2 cups rotisserie chicken, cut into bite sized pieces
  • Rice
  • 1 1/2 cups jasmine rice
  • 3 cups water


  1. Place rice and water in a lidded pot. Bring to a boil, reduce to a simmer, cover, and let cook for 20 minutes.
  2. In a heavy skillet, cook sausage over medium high heat for about 8 minutes or until nicely browned. Transfer to paper towel lined plate.
  3. In the same pan, sauté onions, bell pepper, and celery in olive oil. Once the onion is tender, add the garlic and sauté for another couple minutes.
  4. Sprinkle vegetables with flour and stir to combine. If the mixture is dry add a little more oil. The flour should stick to the vegetables. Cook the vegetables and flour for a couple of minutes.
  5. Add the chicken broth and sprinkle with Cajun seasonings and red pepper.
  6. Turn the heat to medium high, stir constantly, and let simmer for a few minutes until it thickens slightly.
  7. Add chicken and reserved sausage, stir, and let heat through.
  8. Serve over rice.

Simple Side Salad



  • 3 cups baby mixed greens
  • 1 roma tomato, quartered
  • Vinaigrette
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon pepper
  • 1/4 teaspoon kosher salt
  • 1 clove garlic, pressed or minced
  • 3 tablespoons olive oil


  1. Combine vinaigrette and drizzle over greens.

French Bread



  • 1 loaf French bread


  1. Wrap bread in foil for a soft crust or warm without foil for a crunchy crust.
  2. Place in heated oven until heated through.


KID NOTE:  The kids did really well with this meal. I chose a mild andouille sausage and put extra Cajun seasoning on the table for my husband and I to increase the spice level.

VEGETARIAN TIP: Add sliced okra, zucchini, and tomatoes. Use vegetable broth.

GLUTEN FREE MODIFICATIONS: Skip the bread. Make sure your Cajun seasoning is gluten free and use rice flour instead of all purpose flour.

    I haven’t tasted this yet, it looks and smells delicious! However, it is very thin, almost soup like. Is that the correct consistency for Gumbo?
