The simplicity of this dish makes it perfect for a Monday night. Minimal ingredients come together to create a rich sauce that is fabulous with simple chicken and broccoli.

Chicken and Broccoli Pasta



  • 12 ounces pasta shells
  • 4 slices bacon, chopped
  • 1 pound boneless skinless chicken breasts
  • kosher salt and pepper, to taste
  • 2 cups broccoli, cut into small florets
  • 1/2 cup onion, chopped
  • 3 cloves garlic, minced or pressed
  • 1 1/2 cups heavy cream
  • 3/4 cup parmesan cheese, shredded


  1. Cook pasta according to package directions.
  2. Drain, reserving about 1/2 cup pasta water.
  3. Cook chopped bacon in a large skillet over medium high heat until it is crispy. Transfer to a plate and reserve.
  4. Cut chicken into bitesized pieces and season with salt and pepper.
  5. Add the chicken to the skillet with the bacon drippings and cook until well browned on all sides and cooked through.
  6. Transfer to the plate with the bacon.
  7. Add broccoli to the skillet, let brown, add just a bit of water, cover and let steam for 2-3 minutes. Transfer to the plate with the chicken.
  8. Add a bit of oil to the skillet if necessary, and then add onion and garlic. Cook until onion is translucent - about 5 minutes.
  9. Return the chicken and broccoli to the skillet, stir in cream, and let thicken for 5 minutes or so.
  10. Remove from the heat.
  11. Stir in parmesan, pasta, and bacon.
  12. Add a bit of the reserved pasta water if the sauce is too thick.

Simple Italian Side Salad



  • 3 cups romaine lettuce
  • Vinaigrette
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon Italian seasonings
  • 1 pinch pepper


  1. Wash, dry, and tear into a bowl.
  2. Blend vinaigrette ingredients with whisk and drizzle over lettuce.
  3. Toss and serve.
