Mondays are always hard! So, it's nice when dinner is not. Especially when it tastes this good. The chicken marinade calls for a bit of crushed red pepper. My kids didn't notice it at all, but if you are sensitive to spicy food, just leave it out. Same goes for the sauce. The Sriracha gives a great little kick to the sauce, but can easily be omitted.

Chicken Pitas



  • 1 pound boneless skinless chicken breasts, pounded to 1/4" thick
  • 1 tablespoon olive oil
  • 4 pita bread (or flatbread), halved
  • 1/2 cup cucumber, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup grape tomato, chopped
  • Marinade
  • 1 tablespoon Greek yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, finely chopped
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cumin
  • 1/8 teaspoon ground coriander
  • Sauce
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, diced
  • 2 cloves garlic, minced
  • 1/8 teaspoon kosher salt
  • 2 teaspoons lemon juice
  • 1/2 teaspoon Sriracha, optional


  1. Slice pounded chicken into 1" strips.
  2. Toss chicken with marinade until well coated.
  3. Heat olive oil in a heavy skillet over medium high heat until it begins to shimmer.
  4. Add chicken and cook for 5-6 minutes or until juices run clear.
  5. While chicken cooks, combine sauce ingredients in a small bowl.
  6. Stuff pitas with chicken, cucumber, onion, and tomatoes. Then drizzle with sauce.

Hummus with Carrots and Cucumber



  • 1 hummus
  • 2 carrot, cut into sticks
  • 1 cup cucumber, slices


  1. Wash, peel, and cut carrots into sticks.
  2. Wash, trim, and cut celery into sticks.
  3. Serve with hummus for dipping.


KID NOTE: The kids did great with this meal. They loved the chicken and dipping the veggies in hummus.

VEGETARIAN TIP: Skip the chicken and saute chickpeas, zucchini, and red bell pepper in olive oil and then toss in marinade.

GLUTEN MODIFICATIONS Use GF flatbread or convert to a salad. Make sure your hummus is GF.

    My son loved this and asked for the leftovers for lunch the next day. He did not like the yogurt sauce, but a little veganaise was a good substitute for him.
