I could eat an entire bowl of this sauce with a spoon. It is outstanding! Creamy, cheesy, tangy, yet mellow - so yummy! And perfect with a nice seared chicken breast and simple pasta. So, spoon it on and eat up!

Chicken with Creamy Parmesan and Sundried Tomato Cream Sauce over Orzo



  • 1 cup orzo pasta
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 1/2 pounds boneless skinless chicken breasts, pounded 1/4
  • kosher salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced or pressed
  • 1/3 cup dry white wine
  • 1 cup chicken stock
  • 3/4 cup heavy cream
  • 1/3 cup sundried tomatoes
  • 1/3 cup parmesan cheese, grated
  • 1 teaspoon dried basil
  • kosher salt and pepper, to taste


  1. Cook orzo according to package directions, drain and toss in 1T olive oil. Reserve for later.
  2. Season chicken with salt and pepper.
  3. Heat 2T olive oil in a heavy skillet over medium high heat. When the oil begins to shimmer, add chicken and cook 3-4 minutes per side or until juices run clear. Transfer to a plate and tent lightly with foil to keep warm.
  4. Add garlic to the skillet and cook just a minute or two.
  5. Pour wine into the skillet, let simmer, stirring to loosen bits from the bottom of the pan.
  6. Add remaining ingredients and let cook for a few minutes to thicken slightly.
  7. Adjust seasoning with salt and pepper and return the chicken to the skillet.
  8. Serve chicken and sauce over prepared orzo.

  • 1 pound broccoli, cut into florets
  • kosher salt, to taste
  • pepper, to taste


  1. Place broccoli and about 1/2 cup water in a lidded microwavable dish.
  2. Microwave on high for 4-5 minutes or until broccoli is bright green and tender.
  3. Carefully drain water and season with salt and pepper.

VEGETARIAN TIP: Replace the chicken with quartered mushrooms.

GLUTEN MODIFICATIONS: Use rice instead of orzo.

    Veggie Tip: Tofu works well with this dish. The kids love the sauce.
