Cool fall weather and football call for a big pot of chili! This is a very traditional recipe and you can make it with or without beans; that's your call. One of the first things you'll notice about this recipe is the amount of chili powder. Don't be alarmed! Chili powder is the base of chili. If you're nervous, start with less, but I'm betting you'll be adding more looking for that smoky deep flavor! And wait till you taste these amazing cornbread muffins! Our family loves them! So much in fact, that my daughter has been known to eat them for breakfast.




  • 1 1/2 lbs ground beef, 80/20 or chili-style
  • 1/2 onion, diced
  • 1/2 red bell pepper, diced
  • 2 tablespoons olive oil
  • 15 oz diced tomatoes
  • 8 oz tomato sauce
  • 1 light beer
  • 2 cups water
  • 3 -4 tablespoons chili powder
  • 2 tablespoons cumin
  • 1 tablespoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 2 15 oz kidney beans


  1. Heat oil in large stew pot.
  2. Sauté onions and bell pepper until onion is almost translucent.
  3. Add beef and brown. Once browned, drain meat and onion in a colander.
  4. Rinse pot of extra grease and add back beef and onions.
  5. Add remaining ingredients and let simmer for at least 20 minutes.

Cornbread Muffins



  • 6 ounce cornbread mix, like Jiffy
  • 1 large egg
  • 1/2 cup creamed corn
  • 1/2 cup sour cream


  1. Preheat oven to 375.
  2. Combine all ingredients and then pour into lined muffin tins.
  3. Bake 20-25 minutes or until a toothpick in the center comes out clean.

KID NOTE: The chili is very mild and great for the kids. They love the cheese on top. Mine fight over the corn muffins!

VEGETARIAN TIP: Omit the meat and add mushrooms and additional beans.

GLUTEN MODIFICATIONS Make your own cornbread mix using GF all purpose flour. Replace the beer with water.
