Oh my goodness - this is amazing! And I don't say this lightly. The flavors on this plate are fantastic and work perfectly together. Between the bold spices and bright lime in the marinade, the garlicky green beans, and unique rice; you will not be disappointed!

Chili-Lime Skirt Steak

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES PASSIVE TIME : MINUTES

INGREDIENTS

  • 1 1/2 pound skirt steak
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil

DIRECTIONS

  1. Combine all in a shallow bowl or large resealable bag.
  2. Let marinate at room temperature for about 30 minutes (if you have time).
  3. Heat the grill to medium high. Or use a grill pan on the stovetop.
  4. Cook the skirt steak for 3-4 minutes per side for medium rare. Flank steaks are typically thicker and will require more time.
  5. Let steak rest for a few minutes before slicing against the grain.

Yellow Rice

INGREDIENTS

  • 2 tablespoons butter
  • 1/2 cup onion, chopped
  • 1 clove garlic, minced or pressed
  • 1 teaspoon ground turmeric
  • 1 cup jasmine rice
  • 2 cups chicken stock
  • 1 teaspoon kosher salt
  • 1 bay leaf

DIRECTIONS

  1. Saute onion in butter over medium high heat until tender.
  2. Add garlic and saute another minute.
  3. Add remaining ingredients, bring to a boil, reduce to simmer, cover, and let cook for 20 minutes.
  4. Remove lid, discard bay leaf, fluff, and serve.

Garlic-Butter Green Beans

  • 2 tablespoons butter
  • 2 cloves garlic, minced or pressed
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Heat butter in a skillet over medium high heat. Add green beans and garlic. Cook until green beans are crisp tender and slightly browned.
  2. Season with salt and pepper and serve.
