We're adding a little layer of Mexican flavor to our Caesar salad tonight. If you're a fan of Caesar salad, then you're in for a treat. Not only are the Chipotle and lime flavors perfectly suited to a Caesar, but this dressing recipe is fantastic. Enjoy!

Chipotle Shrimp Caesar Salad

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 pounds shrimp (medium), peeled and deveined
  • 4 tablespoons butter
  • 1-2 tablespoons chiles in adobo sauce
  • 1 lime, juiced
  • 8 cups romaine lettuce, torn
  • 1 cup croutons
  • 1/2 cup parmesan cheese, grated
  • Caesar salad dressing
  • 1/3 cup Greek yogurt
  • 1-2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon anchovy paste
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon pepper
  • 1 clove garlic, minced or pressed

DIRECTIONS

  1. Heat half the butter in a large skillet over medium high heat. Once melted, add the shrimp and cook until bright pink.
  2. Stir in the remaining butter, chipotles, and lime juice. Toss to coat and set aside.
  3. Place the lettuce, croutons, and parmesan in a large bowl.
  4. Combine dressing ingredients with a whisk in a small bowl.
  5. Drizzle dressing over greens and toss to combine.
  6. Top with shrimp and garnish with a bit more parmesan.

NOTES

KID NOTE: If your kids are not into salad, serve a portion of shrimp, which is very mild, and maybe a side of fruit or carrots.

VEGETARIAN TIP: Skip the shrimp and anchovy paste. Add nuts or chickpeas.

GLUTEN MODIFICATIONS:  Substitute nuts for the croutons.
