Rich homemade cream sauce, smokey bacon, and peas over ziti - Yum! As the saying goes "bacon makes everything better". Don't count on any leftovers tonight!

Creamy Ziti with Smokey Bacon and Peas

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 pound ziti pasta
  • 6 slices bacon
  • 1 shallot, minced
  • 3 tablespoons dry white wine
  • 1/2 cup frozen peas
  • 1 cup heavy cream
  • kosher salt and pepper, to taste
  • 2 tablespoons Parmesan cheese (grated)

DIRECTIONS

  1. Prepare pasta according to package directions. Drain, but reserve 1/2 cup pasta water.
  2. Return drained pasta back to the pot and add reserved water. Toss to coat.
  3. Slice bacon into 1/4” pieces. Cook in a skillet with the minced shallots until brown and crispy. Transfer to a paper towel lined plate and reserve for later.
  4. Drain all bacon grease from skillet and deglaze with wine over medium high heat. Let wine simmer for a couple of minutes until it mellows and reduces. You’ll know it’s ready when the smell of the wine is not quite as strong.
  5. Add peas, cream, salt, and pepper. Stir to combine and heat through.
  6. Give the pasta a good toss and add it to the sauce. Combine and then add the reserved bacon and shallots.
  7. Garnish with parmesan cheese.

Caesar Salad

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 head romaine lettuce, torn
  • 1 cup croutons
  • 1/2 cup Parmesan (shaved), optional
  • Dressing
  • 1/4 cup Parmesan cheese (grated)
  • 1/4 cup mayonnaise
  • 2 tablespoons whole milk
  • 1 tablespoon lemon juice
  • 1 teaspoon anchovy paste
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • pinch cayenne pepper, optional

DIRECTIONS

  1. Combine dressing ingredients in a small bowl with a blender stick or whisk.
  2. Toss lettuce in small amounts of dressing until coated to your liking.
  3. Add croutons and shaved parmesan.

Garlic Bread

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 4 slices French bread
  • 2 tablespoons butter
  • 1 clove garlic, minced or pressed

DIRECTIONS

  1. Preheat oven to 350.
  2. Melt butter with the garlic in the microwave.
  3. Brush one side of each slice of bread.
  4. Place on the top rack of the oven for about 8-10 minutes or until warm and slightly browned.

NOTES

KID NOTES: This was a huge hit! And, they all went back for more pasta.

VEGETARIAN TIP: Omit the bacon and use a little oil to sauté the shallot. Once the shallot begins to turn translucent, add sliced mushrooms and sauté until slightly browned and tender.

GLUTEN FREE MODIFICATIONS: Use brown rice pasta and nuts in place of croutons.
