VEGETARIAN TIP: Omit the bacon and use a little oil to sauté the shallot. Once the shallot begins to turn translucent, add sliced mushrooms and sauté until slightly browned and tender.
GLUTEN FREE MODIFICATIONS: Use brown rice pasta and nuts in place of croutons.
