KID NOTE: Surprisingly the kids loved the flavors of the salmon – just sweet enough.
VEGETARIAN TIP: Replace salmon with thick slices of firm tofu.

Do you think chicken could be substituted in place of the salmon?
Chicken would work great. I think I’d pound it thin and then adjust the temperature down to 350 or 375. Let us know how it goes!!
This was fantastic and a big hit with my whole family!
Such a winner.
The Salmon was so good! Very juicy and flavorful!
The chicken came out amazing and I will definitely be making this again! I made enough for leftovers and even my coworkers loved the tastes they took. I cooked the chicken just a little bit longer but it came out awesome. Thanks again for another great dish!
The flavors in this dish were AMAZING! I used Cod instead of Salmon and loved it.
I made this twice. Once with chicken! Very flavorful!
I’m wondering how the rice could be adapted to be done in my rice cooker – any suggestions? Thanks!
I’m not familiar with rice cookers – sorry! 😉
For the rice cooker:
1.5 cups basmati
2.5 cups broth
Touch of butter
I didn’t saute the rice like she did but just put it all in the rice cooker. Really good flavor.
Huge hit! I know its a winner when the teenage boy keep going back for more then licks his plate when he thinks no one it looking! Can’t wait to make again. Will definitely make again, maybe try it with chicken. Thanks for a great recipe!
Home run! Salmon wasn’t on sale, so I used chicken thighs. I browned them then put them in the slow cooker with the dijon, honey, and homemade curry seasoning. I was also out of broccoli, so we had asparagus. It was scrumptious!
This is great and so easy and fast! Kids loved it as well. I roasted the broccoli since I already had the oven on. So yummy!
