Curried Honey Mustard Salmon with Savory Rice and Broccoli

Curried Honey Mustard Salmon with Savory Rice and Broccoli 4.39/5 (18 votes)

The flavors in this meal are fantastic. Just unique enough to add a little pep in your dinner rotation, but not outside the comfort zone for the kids to enjoy as well! The curry is subtle, the honey adds a nice sweetness, and the Dijon a little kick. Place the salmon on top of the rice and then drizzle with a little of the left over sauce. So good!

Savory Rice

  • 2 tablespoons butter

  1. Over medium high heat, saute rice in butter for a couple of minutes or until it become opaque, being careful not to let it brown.
  2. Add stock, bring to a boil, reduce to simmer, cover, and let cook for 20 minutes.

KID NOTE: Surprisingly the kids loved the flavors of the salmon – just sweet enough.

VEGETARIAN TIP: Replace salmon with thick slices of firm tofu.

Do you think chicken could be substituted in place of the salmon?

  2. sstabenow says:

Chicken would work great. I think I’d pound it thin and then adjust the temperature down to 350 or 375. Let us know how it goes!!

I’m wondering how the rice could be adapted to be done in my rice cooker – any suggestions? Thanks!

Home run! Salmon wasn’t on sale, so I used chicken thighs. I browned them then put them in the slow cooker with the dijon, honey, and homemade curry seasoning. I was also out of broccoli, so we had asparagus. It was scrumptious!

This is great and so easy and fast! Kids loved it as well. I roasted the broccoli since I already had the oven on. So yummy!
