The flavors in this meal are fantastic. Just unique enough to add a little pep in your dinner rotation, but not outside the comfort zone for the kids to enjoy as well! The curry is subtle, the honey adds a nice sweetness, and the Dijon a little kick. Place the salmon on top of the rice and then drizzle with a little of the left over sauce. So good!

Savory Rice

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 2 tablespoons butter
  • 1 1/2 cups basmati rice
  • 3 cups chicken stock

DIRECTIONS

  1. Over medium high heat, saute rice in butter for a couple of minutes or until it become opaque, being careful not to let it brown.
  2. Add stock, bring to a boil, reduce to simmer, cover, and let cook for 20 minutes.
  3. Remove lid and fluff with a fork.

Curried Honey Mustard Salmon

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 pound salmon
  • 4 tablespoons butter, cut into pieces
  • 1/4 cup honey
  • 1/4 cup Country Dijon mustard, or regular Dijon
  • 1 1/2 teaspoons curry powder
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Preheat the oven to 350.
  2. Place butter, honey, dijon, and curry powder in a 9x13 baking dish.
  3. Bake for about 5 minutes or until butter is melted.
  4. Remove from the oven and increase the heat to 425.
  5. Stir the mixture until well combined and then lay the salmon, skin side down, in the center of the dish. Ladle sauce over the salmon and return the dish to the oven.
  6. Bake for 5 minutes, ladle with sauce, and bake for another 5-6 minutes or until flesh begins to separate.
  7. Remove from oven, spoon sauce over the salmon once more, and season to taste with salt and pepper.

Broccoli

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound broccoli, cut into florets
  • kosher salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Place broccoli and about 1/2 cup water in a lidded microwavable dish.
  2. Microwave on high for 4-5 minutes or until broccoli is bright green and tender.
  3. Carefully drain water and season with salt and pepper.

NOTES

KID NOTE: Surprisingly the kids loved the flavors of the salmon – just sweet enough.

    Chicken would work great. I think I’d pound it thin and then adjust the temperature down to 350 or 375. Let us know how it goes!!

    Home run! Salmon wasn’t on sale, so I used chicken thighs. I browned them then put them in the slow cooker with the dijon, honey, and homemade curry seasoning. I was also out of broccoli, so we had asparagus. It was scrumptious!

    This is great and so easy and fast! Kids loved it as well. I roasted the broccoli since I already had the oven on. So yummy!
