These little bites combine the best of two worlds - crispy potatoes and Mexican flavors! Sounds a little odd? Think of them as a potato skin, but much easier to make and a little smaller; which means you can eat more! Pull out your mandoline to make quick work of the slicing. (I cut my potatoes a little too thin, which worked ok, and they cooked faster.) You'll love the bite of the crispy potato, it's hidden creamy center, and smokey vegetables. Simply delicious.

Fiesta Potato Bites



  • 1 tablespoon olive oil
  • 3 baking potato, washed and sliced into 1/4” rounds
  • 1-2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 tablespoon taco seasoning
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup green onion, sliced


  1. Preheat oven to 400.
  2. Toss potato slices in olive oil and arrange in a single layer on a rimmed baking sheet.
  3. Roast for 20 minutes, flip, and roast for another 25-30 minutes or until cooked through.
  4. While potatoes cook, heat 1-2 tablespoons olive oil in a heavy skillet over medium high heat.
  5. Once the oil begins to shimmer, add onion. When onion becomes slightly translucent, add bell pepper and taco seasoning. Cook until peppers are tender.
  6. Assemble potato bites by layering a dollop of sour cream, a small amount of salsa, sautéed vegetables, and a sprinkling of green onions on each potato round.
