Grilled Caprese Chicken

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 pounds boneless skinless chicken breasts, cut in half widthwise
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced or pressed
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 4 slices mozzarella cheese
  • 2 cups grape tomato, chopped
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon olive oil
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Preheat grill to medium high.
  2. Combine olive oil, vinegar, garlic, honey, and Dijon in a shallow dish or large resealable bag.
  3. Add chicken, coat well, and let marinate at room temperature for about 10 minutes.
  4. Toss tomatoes and basil in vinegar and olive oil and set aside.
  5. Grill chicken for 3 minutes, flip, and grill another 2-3 minutes.
  6. Top the chicken with slices of cheese, cover the grill, and let the cheese melt for a minute or two.
  7. Plate chicken and garnish with tomatoes and basil.
  8. Season with salt and pepper and serve.

Creamed Corn

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 4-5 ears corn
  • 2 teaspoons olive oil
  • 2 tablespoon shallot, minced
  • 1/2 teaspoon pepper
  • 1/2 teaspoon kosher salt
  • 3/4 cup heavy cream

DIRECTIONS

  1. Cut the ears of corn in half. Place the cut side down and carefully cut the kernels from the ear.
  2. In a heavy skillet, heat oil until it shimmers.
  3. Add minced shallot, salt and pepper.
  4. Sauté until shallot is tender.
  5. Add corn and cream and cook for about 10 minutes or until cream is reduced and thickened and corn is tender.

Grilled Garlic Toasts

INGREDIENTS

  • 1 baguette, sliced on an angle
  • 4 cloves garlic, minced or pressed
  • 4 tablespoons butter, softened
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Heat grill (or a cast iron pan on the stove) to medium high.
  2. Combine butter and garlic is a bowl.
  3. Spread butter on one side of each slice.
  4. Grill butter-side down until toasted, flip, and grill another minute.
  5. Season with salt and pepper, if desired.
  6. Transfer to a plate and serve.

NOTES

KID NOTE: The kids did not love the basil. They were served portions of chicken, corn, and a few tomatoes. For the simplest eaters, grill the chicken without marinade.

VEGETARIAN TIP: Replace the chicken with sliced portabella mushrooms or eggplant.

GLUTEN MODIFICATIONS: Skip the toasts.

    Huge hit with my husband. The kiddos were less impressed with the chicken but loved the corn. I skipped the toasts. Great meal!
