BBQ Grilled Chicken Legs

INGREDIENTS

  • 8 chicken legs
  • kosher salt and pepper
  • 1/2 cup barbecue sauce

DIRECTIONS

  1. Heat grill to medium high.
  2. Season chicken with kosher salt and pepper.
  3. Grill over direct heat until nice and crispy.
  4. Transfer to indirect heat and let cook through.
  5. When the legs are almost finished cooking, baste with barbecue sauce.
  6. Serve remaining sauce at the table.

Warm Brussels Sprout Salad

INGREDIENTS

  • 1 pound brussels sprouts, trimmed and finely sliced
  • 3 slices bacon
  • 1/4 cup almonds, chopped
  • 1/4 cup parmesan cheese, shaved or grated
  • Vinaigrette (makes a double batch)
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon shallot, minced
  • 1 clove garlic, minced or pressed
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon pepper

DIRECTIONS

  1. Combine vinaigrette ingredients in a small bowl. Set aside.
  2. Cook bacon in a large skillet over medium high heat until crisp. Transfer to a paper towel lined plate to cool; then chop into bitesized pieces.
  3. Add shaved Brussels to the pan and cook quickly over medium high heat until they turn a deeper shade of green and are browned slightly in spots.
  4. Transfer to a bowl, toss with just enough vinaigrette to lightly coat, and garnish with almonds and parmesan.
  5. Serve.

Grilled Garlic Toasts

INGREDIENTS

  • 1 baguette, sliced on an angle
  • 4 cloves garlic, minced or pressed
  • 4 tablespoons butter, softened
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Heat grill (or a cast iron pan on the stove) to medium high.
  2. Combine butter and garlic is a bowl.
  3. Spread butter on one side of each slice.
  4. Grill butter-side down until toasted, flip, and grill another minute.
  5. Season with salt and pepper, if desired.
  6. Transfer to a plate and serve.
