You will love this steak! First of all, as a cut of meat, flank steak is incredibly flavorful and tender when grilled. If you can’t find flank, skirt steak is a close second. Just be sure you don't over cook it and always slice against the grain. Then spoon a little simple Chimichurri sauce over the top and it sends this dish over the edge! Simple garlic mashed potatoes and green beans makes it a deliciously gorgeous meal.

Garlic Mashed Potatoes

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 pounds baby new potatoes, quartered (peel some and leave others unpeeled)
  • 3 cloves garlic, peeled
  • 2 tablespoons butter
  • 1/2 cup whole milk
  • kosher salt and pepper

DIRECTIONS

  1. Place potatoes and garlic in a large pot of water (making sure the water covers the potatoes).
  2. Bring to a boil, reduce to simmer, and let simmer for about 20 minutes or until potatoes are fork tender.
  3. Drain well.
  4. Mash with butter and then stir in milk until it reaches your desired consistency.
  5. Season with salt and pepper and serve.

Chimichurri Flank Steak

INGREDIENTS

  • 1 pound flank steak
  • 1 cup flat-leaf parsley
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 cup cilantro
  • 2 cloves garlic
  • 1/2 teaspoon red pepper flakes, optional
  • 1/2 teaspoon cumin
  • 1/2 teaspoon kosher salt

DIRECTIONS

  1. Prepare grill or heat a heavy skillet over medium high heat.
  2. Lightly salt and pepper steaks and grill to your liking.
  3. While steaks are cooking, prepare chimichurri sauce by combining the remaining ingredients in a food processor or blender. Puree until smooth and transfer to a bowl and refrigerate until ready to serve.
  4. Let steaks rest for about 10 minutes and then slice across the grain.
  5. Plate strips of steak and top with sauce.

Green Beans

INGREDIENTS

  • 1 pound green beans, trimmed
  • 2 tablespoons butter, optional
  • kosher salt and pepper

DIRECTIONS

  1. Place green beans in a pan, cover with water, bring to a boil, reduce to a simmer, and let cook about 3 minutes or until bright green and crisp tender.
  2. Drain water, add butter, toss to melt, and season with salt and pepper.

NOTES

    Nice and simple meal. My husband and I loved the sauce, but the kids skipped it. That was okay, more for me! The potatoes were great too. Next day put the leftover steak and sauce on a sandwich and grilled it with some cheese and it was still so delicious.
