Grilled Steak and Onions with Twice Baked Potatoes and Simple Green Beans

It truly feels like spring when you can cook (almost) an entire meal on the grill. And a great meal at that. The marinade for the steak and onion is fantastic; well, just grilling onions is fantastic! Choose your favorite cut of beef. We happened to have flank steak on hand; but a strip or ribeye would be amazing. Then dig into a yummy twice baked potato and fresh green beans to round out your meal. Delish!

‘Grilled’ Twice Baked Potatoes

SERVINGS : 2 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 2 baking potato
  • 1/4 cup sour cream
  • 2 tablespoons half-and-half, or milk
  • 1 tablespoon green onion, sliced
  • 1/3 cup cheddar cheese, grated
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Heat grill to medium high.
  2. Poke 3-4 holes in each potato and microwave until tender.
  3. Carefully cut the very top off each potato. Using a spoon, hollow out the potatoes into a bowl. Leave some of the potato attached to the skin for sturdiness.
  4. Add sour cream, half-and-half (a little at a time), and cheese. Combine using a potato masher until somewhat smooth.
  5. Add onions and season with salt and pepper.
  6. Gently, spoon mashed potatoes into the skins and grill on the top rack for about 15-20 minutes.

Grilled Flank Steak and Red Onions

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES PASSIVE TIME : MINUTES

INGREDIENTS

  • 1 1/2 pounds flank steak
  • 1 red onion, cut into thick rounds
  • 1/4 cup olive oil
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons red wine vinegar
  • 1 tablespoons lemon juice
  • 1 tablespoons Worcestershire sauce
  • 1 1/2 teaspoons Dijon mustard
  • 1 clove garlic, minced or pressed
  • 1/2 teaspoon pepper

DIRECTIONS

  1. Place all ingredients in a resealable bag or dish and let marinate at room temperature for about 30 minutes.
  2. Preheat grill to medium high.
  3. Grill the steak 4-5 minutes per side, depending on the thickness, or until it is cooked to your liking. Onions can cook at the same time and should be nice and tender and slightly charred when the steak is cooked.
  4. Let the steak rest 5 minutes, then cut thinly across the grain.
  5. Serve steak topped with grilled onions.

Green Beans

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound green beans, trimmed
  • 2 tablespoons butter, optional
  • kosher salt and pepper

DIRECTIONS

  1. Place green beans in a pan, cover with water, bring to a boil, reduce to a simmer, and let cook about 3 minutes or until bright green and crisp tender.
  2. Drain water, add butter, toss to melt, and season with salt and pepper.

NOTES

KID NOTE: They did very well with the steak, potato, and green beans. The onions were a no-go.

VEGETARIAN TIP: Grill portabella mushroom caps instead of steak.

GLUTEN MODIFICATIONS:  Use tamari instead of soy sauce and make sure your Worcestershire is gluten free.
