I'm constantly searching for unique marinades to keep our grilled dinners exciting. Well, that's just what we have tonight. Lemon, garlic, and fresh jalapeno provides a fresh tangy flavor. Don't worry too much about the jalapeno adding too much spice. Once the seeds and veins are removed and it's minced and cooked, you're left with a nice fresh flavor without much spice. If you're concerned, cut the amount in half. And, don't skip the salad!! It's a family favorite in our house.

Jalapeno Lemon Chicken

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 pounds boneless skinless chicken breasts, cut in half lengthwise
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced or pressed
  • 1 tablespoon dried oregano
  • 1 jalapeno, seeded and minced
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Heat grill to medium high (or use a grill pan indoors).
  2. Combine remaining ingredients in a large resealable bag and let marinate while the grill heats.
  3. Cook 2-3 minutes per side, basting with remaining marinade, or until juices run clear.
  4. Let rest for a couple of minutes, slice, and serve.

Broccoli Apple Salad

SERVINGS : 4 PEOPLE PREP TIME : MINUTES PASSIVE TIME : MINUTES

INGREDIENTS

  • 1 head broccoli, cut into florets
  • 1 apple, cored and chopped
  • 4 slices bacon, cooked and chopped
  • 1/4 cup red onion, chopped
  • 1/2 cup raisins
  • 1/2 cup mayonnaise
  • 1/4 cup sugar
  • 1 tablespoon cider vinegar

DIRECTIONS

  1. Combine all ingredients and refrigerate for about 30 minutes.
  2. Can be made the night before with great results.

NOTES

KID NOTE: The chicken marinade is very mild and the kids liked it a lot. And, they devoured the broccoli apple salad.

VEGETARIAN TIP: Skip the chicken and use the marinade for veggie kabobs with mushrooms, zucchini, and onions.

GLUTEN MODIFICATIONS: Gluten free as written.

    The jalapeño chicken was outstanding. The jalapeño gave the chicken a bright flavor, not hot at all. The salad was not a hit…a bit too sweet for our taste.

    Itge chicken is really good the day of and amazing cold! I halved the sugar in the broccoli salad because 1/4 cup sounded way too sweet.it was still a bit sweet for my taste but really good. I will definitely make it again with maybe 1 tbl of sugar.

    LOVED the broccoli salad! The chicken was also delicious! I loved that I could make the salad and marinade the chicken the day before and have dinner on the table super fast the next day!!

    The chicken was delicious!! So juicy and full of flavor. We all loved it and it was a big win with my 12 year old.
