Dinners don't get much easier than this. Very little prep and very few dishes to wash. That's a win even before we even talk about how yummy this meal tastes! Roasting salmon is one of my favorite ways to achieve a perfectly cooked piece of fish. And adding a flavorful rub just takes it to another level. While the salmon cooks the rub oozes onto the potatoes and broccolini too! Yummm! Add a drizzle of cool dill sauce and holy cow, this is amazing!

Lemon Roasted Salmon Potatoes and Broccolini with Cool Dill Sauce

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 pound baby new potatoes, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • kosher salt and pepper, to taste
  • 1 pound salmon
  • 1 tablespoon honey
  • 2 cloves garlic, minced or pressed
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 teaspoons smoked paprika, or regular paprika
  • 1/4 teaspoon cayenne pepper
  • 1 lemon
  • 1 pound broccolini, ends trimmed
  • Dill Sauce
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon green onion, minced
  • 1/2 teaspoon dried dill weed
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper

DIRECTIONS

  1. Preheat oven to 425.
  2. Place potatoes on a rimmed baking sheet, drizzle with 1 tablespoon olive oil and toss to coat.
  3. Spread in a single layer and sprinkle with salt and pepper.
  4. Transfer to the oven and cook for 15 minutes.
  5. While the potatoes cook, mix remaining olive oil with honey, garlic, parsley, thyme, oregano, paprika, cayenne, and lemon juice (reserving 1t for the sauce). Set aside.
  6. Remove the potatoes from the oven. Flip them and make room in the center of the sheet for the salmon.
  7. Baste the salmon with herb mixture and arrange broccolini on the sheet.
  8. Place the sheet back in the oven and cook another 15 minutes or until salmon flakes easily with a fork.
  9. Combine sauce ingredients with reserved lemon juice. Serve cool drizzled over salmon.

NOTES

KID NOTE: Leave a portion of the salmon free of seasonings.

VEGETARIAN TIP: Skip the salmon and add additional vegetables. Toss all in herb mixture.
