Think of this as a 'burger salad'. I'm serious. You really don't need the bun! These incredibly flavorful patties can hold their own. And when topped with a simple chopped Greek salad and paired with a few fries - holy deliciousness!

Oven French Fries

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 pound potato, sliced into fries
  • 1-2 tablespoons olive oil
  • seasoned salt, to taste

DIRECTIONS

  1. Preheat oven to 450.
  2. Line a rimmed baking sheet with foil.
  3. Place sliced potatoes onto sheet, drizzle with oil, toss to coat, and spread into a single layer.
  4. Place in the oven for 20 minute.
  5. Remove, flip them the best you can, and return to the oven for another 15 minutes or so.
  6. Sprinkle with seasoned salt to taste

Mediterranean Turkey Burgers

INGREDIENTS

  • 4 hamburger buns
  • 1 1/2 pounds ground turkey
  • 3 cloves garlic, minced or pressed
  • 2 tablespoons shallot, minced
  • 1/2 teaspoon cumin
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 cups baby mixed greens, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grape tomato, chopped
  • 1 pickling cucumbers, chopped
  • 1/4 cup feta cheese crumbles (or goat cheese crumbles), crumbled
  • 1/2 lemon, juiced
  • 2-3 tablespoons olive oil
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Heat outside grill or use a cast iron skillet indoors.
  2. Combine turkey and next 7 ingredients in a large bowl and then form into 4 patties.
  3. Grill patties 4-5 minutes per side or until internal temperature is at least 160 degrees.
  4. While the burgers cook; toss greens tomatoes, and cucumber with lemon juice and olive oil. Season with salt and pepper and gently toss in feta.
  5. Place a cooked patty on each bottom bun, top with dressed greens (or serve on the side).

NOTES

KID NOTE: The kids were served burgers without greens. Instead they were given sliced fruit.

VEGETARIAN TIP: Replace the turkey with seitan. Pulse seitan and a bit of flour in the food processor until it resembles ground meat. Add remaining ingredients. Adjust consistency with vegetable stock and additional flour.

GLUTEN MODIFICATIONS: Use gluten free hamburger buns.

    do you think I could mix the Feta into the ground turkey mixture with the other seasonings?

    The turkey burgers were great! My husband even enjoyed them, and he usually is not a fan when I make a recipe with turkey instead of beef.
