Holy Yum! About two bites into this meal, my kids fell totally silent. And that's unusual! The combination of sausage, mushroom, tiny bits of tomato, spinach and rich cream sauce is dynamite. The pasta, in my opinion, is simply the vehicle. So, choose what your family likes. I enjoy orecchiette because it creates little 'cups' for the sauce to sit. Enjoy!

Orecchiette with Sweet Italian Sausage Cream Sauce

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound Orecchiette pasta, or penne pasta
  • 1 pound bulk Italian sausage, casings removed
  • 1 onion, chopped
  • 3 cloves garlic, minced or pressed
  • 2 cups mushrooms, sliced
  • 2/3 cup dry white wine
  • 14 ounce petite diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese
  • 2 cups baby spinach

DIRECTIONS

  1. Cook pasta according to package directions. Drain all but 1/2 cup water and reserve for later.
  2. Cook sausage and onion in a large skillet over medium high heat until sausage begins to brown. Drain excess fat.
  3. Add garlic and mushrooms and continue to cook until mushrooms are tender and sausage is cooked through.
  4. Increase heat to high, add wine and let simmer down until almost evaporated.
  5. Reduce heat to medium high, and add tomatoes and cream. Let cook for a few minutes and come to a low simmer. Then stir in parmesan.
  6. Once parmesan has melted, add spinach and stir until wilted.
  7. Plate pasta and top with sauce.

Italian Vinaigrette Salad

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 4 cups baby mixed greens
  • 1 roma tomato, sliced
  • Italian Vinaigrette (makes a double batch)
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasonings
  • kosher salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Combine with a blender stick or whisk.
  2. Drizzle greens with vinaigrette, toss, and serve.

VEGETARIAN TIP: Skip the sausage and increase the mushrooms and spinach.

    Delicious! I no longer need to go to Macaroni Grill or Olive Garden. So easy to make and so tasty!!!

    I wasn’t a fan of this dish. I felt like the dish was missing something. Maybe a little spice or something. I didn’t like it, but the kiddo ate it up and then some.

    Holy cow this was good! Thank you so much to the person who suggested using zucchini instead of mushrooms – excellent substitution. Though in the interest of full disclosure, I admit that I peeled the zucchini so that my kids wouldn’t see ‘green things’ in the dish. The orecchiette was a nice change, and made it much more fun for my kids to put sausage and sauce into the noodle ‘bowls’. We will definitely be making this again!

    Very good! Used roasted broccoli instead of mushrooms. family loved it. couldn’t figure out what the reserved pasta water was for??

    This was yummy! I added some asparagus that I had in the fridge and really added to it. The kids don’t seem to notice the mushrooms! Win!

    Used ground Italian sausage and canned mushrooms for time saving. Sauce very thin so had to thicken. Also used cheese filled tortellini. Delicious.

    This was excellent! We used hot Italian sausage instead of sweet; sliced 2, 8-ounce packages of fresh mushrooms; and added an entire 8 ounce bag of spinach. We are looking forward to the leftovers and making this again!

    This is a favorite and we made it this week as a sub for a different pasta dish. It was just so good that I wanted to send in the feedback. It was excellent! We made it a “double favorite”! I didn’t have spinach (we used too much from another meal), so I used basil from my garden as a sub. Amazing!
