Balsamic Mushrooms and Brie Pork Chops with Green Beans and Quick Wild Rice

If you love mushrooms, you will fall in love with these! Add to that tender, lightly seasoned pork chops and soft brie and you have sheer perfection! Crisp green beans and nutty wild rice are simple sides that compliment without overpowering the pork chops. All said - a beautifully delicious meal!

Balsamic Mushrooms and Brie Pork Chops

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound pork chops, thin cut
  • 1 tablespoon olive oil
  • kosher salt and pepper, to taste
  • 4 slices Brie cheese
  • Balsamic Mushrooms
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced or pressed
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon heavy cream

DIRECTIONS

  1. Season pork chops with salt and pepper
  2. Heat 1T oil in a heavy skillet over medium high heat until it shimmers. Add pork chops and brown on both sides, about 2-3 minutes per side, depending on the thickness of your chops (mine were thin).
  3. Remove chops and lightly tent with foil to keep warm.
  4. In the same pan, add another 1T of oil. When the oil shimmers, add garlic and let sauté for 1-2 minutes. Do not let the garlic brown. Add mushrooms and sauté until most of the liquid absorbs. Immediately add balsamic and let it simmer until reduces by half. Stir in cream and remove from the heat.
  5. Plate the chops, top with a slice of cheese and a helping of mushrooms.

Green Beans

INGREDIENTS

  • 1 pound green beans, trimmed
  • 2 tablespoons butter, optional
  • kosher salt and pepper

DIRECTIONS

  1. Place green beans in a pan, cover with water, bring to a boil, reduce to a simmer, and let cook about 3 minutes or until bright green and crisp tender.
  2. Drain water, add butter, toss to melt, and season with salt and pepper.

Wild Rice

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 cup wild rice, quick cook variety
  • 2 cup water
  • 1 tablespoon butter, optional

DIRECTIONS

  1. Combine all in a lidded pot, bring to a boil, reduce to simmer, cover, and let cook according to package directions (all varieties have different cook times).
  2. Remove lid and fluff with a fork.

NOTES

KID NOTE:  This was quite a sophisticated plate for a bunch of kids. They didn’t love the mushrooms and brie but they did great with the pork chops and green beans.

VEGETARIAN TIP: Replace the pork chop with a big slice of sourdough bread.

GLUTEN MODIFICATIONS:  Gluten Free as written.

    If my family doesn’t like pork chops, what would be a good alternative? I’m considering steak since the balsamic mushrooms sound like they would work well with steak.

    The whole family loved this recipe! I used goat cheese since I didn’t locate the Brie at the supermarket.
