You're going to love this salsa! It's kind of a mix between a pasta sauce and a dipping sauce and is full of bright flavors that work incredibly well with simple tilapia and broccolini. Use warm bread to mop up any extra sauce left on your plate. Enjoy!

Pan Seared Tilapia and Broccolini with Bright Salsa Rosa

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 tablespoon olive oil
  • 1 pound broccolini, trimmed
  • 1 1/2 pounds tilapia fillets
  • kosher salt and pepper, to taste
  • Bright Salsa Rosa
  • 1 cup roasted red bell peppers, chopped
  • 1/4 cup sundried tomatoes, chopped
  • 1/4 cup banana peppers, chopped
  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • 1 teaspoon sugar, optional

DIRECTIONS

  1. Combine salsa ingredients in a blender or small food processor, pulse until well combined.
  2. Transfer to a small sauce pan and heat over medium heat.
  3. Heat olive oil in a skillet. Once it begins to shimmer, add broccolini and cook until bright green on crisp tender. Transfer to a plate and tent to keep warm.
  4. Season tilapia with kosher salt and pepper.
  5. Add a bit more oil to the skillet if necessary.
  6. Cook tilapia for a couple of minutes, flip, add broccolini back to the skillet to heat.
  7. Cook until fish flakes easily.
  8. Plate sauce and top with broccolini and tilapia.

French Bread

INGREDIENTS

  • 1 loaf French bread

DIRECTIONS

  1. Wrap bread in foil for a soft crust or warm without foil for a crunchy crust.
  2. Place in heated oven until heated through.

NOTES

KID NOTE: The kids did very well with the tilapia and broccolini (and of course the bread) but chose not to have any sauce.

VEGETARIAN TIP: Substitute chick peas and mushrooms for the fish.

GLUTEN MODIFICATIONS: Skip the bread.
