Poblano Steak and Charred Corn Tacos

It's all about the grill tonight! Charred corn, mild and mellow poblanos, grilled sweet onions, and juicy steak. We could stop there. But no! Add tangy tomatoes, avocados, cilantro, and some salsa verde, and BAM! We have an awesome taco. Enjoy!

Poblano Steak and Charred Corn Tacos

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 pounds skirt steak
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1/2 teaspoon garlic salt
  • 2 poblano pepper
  • 4 ears corn
  • 1 onion, peeled and sliced thickly
  • 2 lime, wedged
  • 1 cup grape tomato, halved
  • 1 avocado, diced
  • 1/2 cup cilantro, chopped
  • 1 cup Salsa Verde
  • 8 corn tortillas

DIRECTIONS

  1. Heat grill to medium high.
  2. Combine olive oil, balsamic and garlic salt in a large resealable bag. Add steak and let marinate.
  3. Shuck the corn.
  4. Lightly brush the corn, poblano, and onion slices with oil.
  5. Place steak, corn, poblano, and onion slices on the grill.
  6. Cook 2-3 minutes and flip. Continue to cook until steak has reached your desired degree of doneness.
  7. When the steak is cooked, transfer it to a chopping block to let rest while the corn, poblano, and onion continue to cook.
  8. Brush tortillas with a bit of oil and place them on the grill. Heat until soft or if you wish, continue to grill until crispy.
  9. Transfer the vegetables to the chopping block with the steak.
  10. Cut the corn from the cob and the onion into bitesized pieces.
  11. Once the poblano is cool enough to touch, remove the stem and seeds and pull the skin off.
  12. Dice the poblano.
  13. Cut the steak into sections and then slice against the grain into strips.
  14. Plate the strips and top with vegetables, tomatoes, avocado, and cilantro.
  15. Drizzle with salsa verde.
  16. Serve with lime wedges for squeezing and corn tortillas for stuffing.

NOTES

KID NOTE: Deconstruct to serve avocado, corn, tomato, and steak.

VEGETARIAN TIP: Instead of steak, Thread zucchini, mushrooms, and bell peppers. Brush with steak marinade and grill.
