My family devoured this meal! It has all their favorites...pork, bacon, and pasta! They did call me out on adding spinach to the pasta! But it didn't stop them cleaning their plates!

Spinach-Parmesan Pasta

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 8 ounces angel hair pasta
  • 1/4 cup heavy cream
  • 1/4 cup Parmesan cheese (grated)
  • 2 tablespoons butter, melted
  • 4 cups baby spinach, chopped
  • 1 tablespoon lemon juice
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Cook pasta according to package directions. Drain and reserve about 1/2 cup pasta water.
  2. In a large bowl, stir together cream, parmesan, melted butter, spinach, and lemon juice.
  3. Transfer cooked pasta to the bowl and toss until the pasta is well coated and the spinach is wilted.
  4. Add a bit of reserved pasta water to thin if desired.
  5. Season with salt and pepper.

Pork Saltimbocca

INGREDIENTS

  • 1 1/2 pounds pork tenderloin, cut into 1 1/2" rounds
  • kosher salt and pepper, to taste
  • 3 slices bacon, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced or pressed
  • 1 cup dry white wine
  • 1 cup chicken stock
  • 2 tablespoon butter
  • 1/2 teaspoon rubbed sage

DIRECTIONS

  1. Place tenderloin rounds on a chopping block, cover with parchment or plastic wrap, and pound until 1/2" thick.
  2. Season with salt and pepper.
  3. Heat a heavy skillet over medium high heat. Add bacon and cook until crispy. Transfer to a paper towel lined plate and reserve.
  4. Add pork to the skillet (and a bit of oil if necessary). Cook for about 2 minutes on each side or until nicely browned. Transfer to the plate with the bacon.
  5. Add mushrooms to the skillet. Cook for 5-6 minutes or until they are nicely browned and tender.
  6. Stir garlic into the mushrooms and let cook just a minute or two.
  7. Pour in wine and chicken stock. Stir, scraping bits off the bottom, and let simmer down until it is reduced by half.
  8. Stir in butter and sage.
  9. Return the pork and bacon to the skillet and warm.
  10. Serve over pasta.

NOTES

KID NOTE: Deconstruct the plate and serve portions of pork, pasta, and spinach.

VEGETARIAN TIP: Skip the pork and bacon. Add squash and peas.

    This was a great meal. I used a pre-seasoned pork tenderloin because it was the only one that was the right size, and it worked well with the recipe.
