Pot Stickers and Dipping Sauce

A little labor intensive but so worth it! Grab the kids and have them come in and help. It’s actually a fun project. The filling takes no time at all to whip up. It’s the fancy folding that takes the time. We’ve tried all different shapes and the kids have a blast. Depending on the shape you end up with, you can crisp one or both sides of the pot stickers. We like them both ways. Have fun!

Pot Stickers

SERVINGS : 6 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 package wonton or eggroll wrappers
  • 1/2 pound ground pork
  • 2 cups Napa cabbage, chopped
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon green onion, sliced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon pepper

DIRECTIONS

  1. Place all the filling ingredients in the bowl of a food processor and pulse until well combined.
  2. Spoon about a teaspoon of filling into the center of each wonton wrapper. If you are using eggroll wrappers, cut them into fourths.
  3. Fill a small bowl with water. Dip your finger in the water and then gently line two sides of the wonton with a little water.
  4. Bring two opposite corners to the middle and seal at the point. Bring the other two opposite sides to the middle as well and seal the sides.
  5. Now you will have a flat bottom with a peak on top.
  6. Heat 1-2 tablespoons canola oil in a large skillet over medium high heat.
  7. Add pot stickers, flat side down, and cook for about 2 minutes.
  8. Add 1/3 cup water to the pan, reduce heat to medium, and cook for about 5 minutes.
  9. Remove from pan and let cool for a couple of minutes.

Dipping Sauce

INGREDIENTS

  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons chile garlic sauce
  • 2 tablespoons green onion, sliced
  • 2 teaspoons cilantro, minced or pressed
  • 1/4 teaspoon ground ginger

DIRECTIONS

  1. Simply combine all ingredients.

NOTES

KID NOTES: Elbows were thrown and a few tears were shed trying to share.

VEGETARIAN TIP: Used mashed lentils or chickpeas in place of the pork.

GLUTEN MODIFICATIONS: Use gluten free wonton wrappers or, simply make little ‘cakes’ with the filling and pan fry. Use tamari instead of soy sauce.
