Roasted Pork Tenderloin and Sweet Potatoes with Cilantro Cream Sauce and a Simple Side Salad

I love a good one-pan recipe! And this is just that. The pork tenderloin and sweet potatoes cook together to create a really nice dish. While they're in the oven, you can take your time making the cilantro cream sauce and whip up a quick fresh salad. Delish!

Roasted Pork Tenderloin and Sweet Potatoes with Cilantro Cream Sauce

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 tablespoon olive oil
  • 1 1/2 pounds pork tenderloin
  • kosher salt and pepper, to taste
  • 1 pound sweet potato, washed and cut into bitesized pieces
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 1/2 teaspoon honey
  • kosher salt and pepper
  • Cilantro Cream Sauce
  • 1/2 cup cilantro, chopped
  • 2 ounces diced green chiles
  • 1 clove garlic, minced or pressed
  • 2 tablespoons slivered almonds
  • kosher salt and pepper, to taste
  • 1 cup sour cream

DIRECTIONS

  1. Preheat oven to 350.
  2. Heat olive oil over medium high heat in an oven safe skillet.
  3. Season tenderloin with salt and pepper to taste.
  4. Brown tenderloin on all sides.
  5. Toss cubed sweet potatoes with remaining olive oil, lime juice, honey, and salt and pepper.
  6. Arrange the potatoes and the liquid around the pork.
  7. Transfer to the oven and cook uncovered for 40-45 minutes or until tenderloin is 150 degrees and sweet potatoes are fork tender.
  8. While tenderloin is cooking, place Cilantro Cream Sauce ingredients in a small food processor or blender. Blend until combined, it will be a little chunky.
  9. Serve pork and sweet potatoes drizzled with cream sauce.

Lightly Dressed Greens

INGREDIENTS

  • 4 cups baby mixed greens
  • 2 tablespoons red onion
  • Vinaigrette
  • 2 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon pepper

DIRECTIONS

  1. Place greens and red onion in a salad bowl.
  2. Combine vinaigrette ingredients with a whisk or by shaking in a lidded container.
  3. Drizzle vinaigrette over greens and toss to coat.

NOTES

KID NOTE: Serve the sauce on the side. Otherwise, they did really well with the tenderloin and sweet potatoes.

VEGETARIAN TIP: Skip the pork and add a medley of vegetables including onion, mushroom, turnips, and brussels sprouts.
