Rosemary Pork Medallions over Peas and Bacon with Garlic Bread

Peas and bacon. Sound strange? Maybe, but it's pretty darn delicious! And with a simple garlic and rosemary pork tenderloin medallions; it's really good. I served garlic bread to satisfy the hearty appetites at our table.

Garlic Bread

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 4 slices French bread
  • 2 tablespoons butter
  • 1 clove garlic, minced or pressed

DIRECTIONS

  1. Preheat oven to 350.
  2. Melt butter with the garlic in the microwave.
  3. Brush one side of each slice of bread.
  4. Place on the top rack of the oven for about 8-10 minutes or until warm and slightly browned.

Rosemary Pork Medallions

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 pounds pork tenderloin
  • kosher salt and pepper, to taste
  • 3 cloves garlic, minced into a paste
  • 3 tablespoons olive oil
  • 2 teaspoons fresh rosemary, or 1t dried

DIRECTIONS

  1. Preheat the grill to medium high (or use a grill pan on the stovetop).
  2. Trim the silver skin from the pork tenderloin. Then, slice the tenderloin into 1-inch rounds.
  3. Place rounds on a chopping block, cover with plastic wrap, and pound with a mallet or rolling pin to 1/2" thick.
  4. Season chops with salt and pepper.
  5. Finely chop the rosemary and place in a small bowl. Add garlic and olive oil and mix well.
  6. Spread the mixture onto one or both sides of the medallions.
  7. Grill medallions 2-3 minutes per side or until pork is no longer pink in the center. Try not to overcook. The meat will continue to cook a minute or two after it comes off the grill.

Peas and Bacon

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 2 slices bacon, chopped
  • 2 green onion, sliced
  • 10 ounces frozen peas
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Cook bacon in a skillet over medium high heat.
  2. When it is almost cooked, add the white parts of the onion.
  3. Cook for a minute a two or until the onion is tender.
  4. Add peas and cook until hot.
  5. Stir in green parts of the onion and cook just a minute.
  6. Season with salt and pepper and serve.

NOTES

KID NOTE: Season the kid medallions with simple salt and pepper. Peas and bacon were a huge hit.

VEGETARIAN TIP: Substitute sliced eggplant for the pork. Skip the bacon and add a bit of olive oil.

GLUTEN MODIFICATIONS:  Skip the bread.
