VEGETARIAN TIP: Skip the sausage and use vegetable stock. If you’d like to add a bit more substance, consider adding carrots and zucchini.
GLUTEN MODIFICATIONS: Use gluten free tortellini or a small gluten free pasta (or rice).
This was a big crowd-pleaser – especially for a chilly night! I would recommend NOT adding the full package of tortellini, as I did and keep to the recipe. Also, I served this with crusty bread and it was yummy!
I don’t know why I’ve never thought to make “meatballs” this way before. So smart! My family ate all the tortellini out of the soup, so I added beans as a filler for my leftovers. Yum!
Easy and delicious!
We really enjoyed this soup. We bought and sliced sausage links instead of making sausage meatballs. We also added the entire bag of kale, but we don’t have kids and we both like kale. We will make this again!
