Sausage Tortellini Soup

Dinner doesn't get much easier than this!! It relies on very few ingredients, which makes it super simple. But, be mindful that when there are few ingredients, you should make sure you're using the best ingredients. So, choose a sausage you've used before and loved. We happen to prefer the bulk Italian sausage from the butcher counter. And, I've also had tastier results using refrigerated tortellini rather than the dried boxed varieties. Enjoy!!

Sausage Tortellini Soup

SERVINGS : 6 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound bulk Italian sausage
  • 1 cup onion, chopped
  • 1 tablespoon olive oil
  • 6 cloves garlic, minced or pressed
  • 6 cups chicken stock
  • 14 ounces diced tomatoes, undrained
  • 9 ounces tortellini
  • 3 cups kale, chopped
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Form sausage into 1 inch meatballs.
  2. Heat olive oil in a stock pot over medium high heat. When it begins to shimmer, add onion, and meatballs.
  3. Cook for about 5 minutes or until onions are tender and meatballs are nicely browned.
  4. Add garlic and cook just a minute.
  5. Stir in chicken stock and tomatoes. Bring to a boil and let simmer for a few minutes.
  6. Add tortellini and kale. Cook according to package directions or until tortellini is tender.
  7. Season with salt and pepper and serve.

NOTES

KID NOTE: The kids devoured their dinner!  

VEGETARIAN TIP: Skip the sausage and use vegetable stock. If you’d like to add a bit more substance, consider adding carrots and zucchini.

GLUTEN MODIFICATIONS:  Use gluten free tortellini or a small gluten free pasta (or rice).

    This was a big crowd-pleaser – especially for a chilly night! I would recommend NOT adding the full package of tortellini, as I did and keep to the recipe. Also, I served this with crusty bread and it was yummy!

    I don’t know why I’ve never thought to make “meatballs” this way before. So smart! My family ate all the tortellini out of the soup, so I added beans as a filler for my leftovers. Yum!

    We really enjoyed this soup. We bought and sliced sausage links instead of making sausage meatballs. We also added the entire bag of kale, but we don’t have kids and we both like kale. We will make this again!
