Over the course of our marriage, I have made a ton of different meals. And with each, I am guaranteed a review from my husband. Let's just say that he's 'critical but kind' :). At any rate, you would have thought I had spent the better part of the day on this meal because he was impressed! And I agree; this meal is fantastic. But, the praise was even better than the meal. I know you can relate! So enjoy all the compliments tonight. It feels good - right?

White Rice



  • 1 1/2 cups basmati rice
  • 3 cups water


  1. Place rice and water in a small pot.
  2. Bring to a boil, reduce to a simmer, cover.
  3. Let cook for 20 minutes (if using brown, follow package directions for cooking time), remove lid, and fluff with a fork.

Seared Chicken with Sun-Dried Tomato Sauce



  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts, pounded to 1/2”
  • kosher salt and pepper, to taste
  • 2 cloves garlic, minced or pressed
  • 1/4 teaspoon red pepper flakes, optional
  • 1/4 cup dry white wine, or chicken stock
  • 3/4 cup chicken stock
  • 1/2 cup heavy cream
  • 1/4 cup sundried tomatoes, chopped
  • 1/4 cup parmesan cheese, grated
  • kosher salt and pepper, to taste


  1. Season chicken with salt and pepper.
  2. Heat olive oil in a heavy skillet over medium high heat.
  3. When it begins to shimmer, add chicken and sear for 2-3 minutes per side, or until golden and almost cooked through.
  4. Transfer the chicken to a plate and reserve.
  5. Add a touch more oil to the pan if necessary then add garlic and red pepper flakes. Stand back a bit, the fumes from the red pepper can sting your eyes.
  6. Cook for just a minute and then add wine. Let the wine simmer and bubble, and using a spatula, scrape the bits off the bottom on the pan.
  7. Add chicken stock, cream, and sun-dried tomatoes. Let simmer for a few minutes, stir in the parmesan cheese.
  8. Add salt and pepper and adjust for seasonings.
  9. Return the chicken to the pan and let continue to cook until the chicken juices run clear when poked.
  10. Plate chicken and ladle with sauce.

  • 1 pound broccolini, trimmed
  • 1 tablespoon butter
  • kosher salt, to taste
  • pepper, to taste
  • 2 tablespoons lemon juice


  1. Place broccolini in a lidded microwave safe dish.
  2. Add 1/4 cup water, cover, and microwave for 3-4 minutes on high.
  3. Drain, add butter, cover and let melt. Uncover, add lemon juice, and season with salt and pepper.

KID NOTE: Go light on the sauce (or save it all for yourself).

    This was really good! It only took me just over 30 minutes to make. My husband said that he would definitely eat this again. It’s a keeper.

    My husband prefers chicken baked rather than cooked in a pan. Do you think this chicken dish could be baked? Maybe sear it as directed but then bake it with the sauce to finish it off?

      I think I would bake it and then simmer it in the sauce to finish. If you bake with the sauce in afraid the sauce will cook down too much.

    This turned out really well- however, I would put maybe only half of the parmesan cheese next time or else maybe not grated but shredded.

    Loved this! No one carries broccolini around here so we used broccoli. The sauce is delicious. I cut the chicken into smaller pieces so I would have leftovers for lunch!

    Delicious but not enough sauce. I tripled recipe so that I had enough gravy for rice. Also used sour cream and milk instead of heavy cream. You cam also do flour and milk with chicken broth to help thicken. Family enjoyed it.
