This is the definition of a 'no brainer' meal. And perfect after a long Monday! Everything cooks in a flash; which is also a bonus! The shrimp, broccolini, tomatoes, and lemon butter sauce do their thing in the oven while the angel hair cooks on the stove. If you time it right, you can have dinner on the table in 20 minutes. Now, I will say a few things about the sauce. One - it's delicious. Two - it's light, not thick. And Three - it you prefer your pasta to drown in lots of sauce, double it. Enjoy!

Sheet Pan Shrimp Scampi

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 8 ounces angel hair pasta
  • 1/2 cup butter
  • 1 lemon, sliced
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced or pressed
  • 1 pound shrimp (medium), peeled and deveined
  • 2 cups grape tomato
  • 2 cups broccolini
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 tablespoons capers
  • 1/4 cup fresh parsley, chopped

DIRECTIONS

  1. Preheat oven to 450.
  2. Prepare pasta according to package directions, drain, and reserve.
  3. Place butter, lemon slices, and garlic on a rimmed baking sheet. Transfer to the oven and let cook about 5 minutes.
  4. Add shrimp, tomatoes, and broccolini.
  5. Sprinkle with red pepper, salt, and pepper. Toss to coat and return to the oven and cook another 4-5 minutes. Shrimp should be bright pink and firm.
  6. Serve over pasta and ladle with pan juices.

Italian Side Salad

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 head romaine lettuce
  • 1/2 cup mushrooms, sliced
  • 1/2 cup cucumber, sliced
  • Vinaigrette
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 cloves garlic, minced
  • 1 tablespoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasonings
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon pepper

DIRECTIONS

  1. Blend vinaigrette ingredients with whisk, food processor or blender stick.
  2. Toss with salad.

KID NOTE: The kids loved everything but the tomatoes.

      I sprinkled a few capers on top once the dish was plated; but didn’t include them in the ingredient list. Sorry for the confusion.
