I love salsa and have tried MANY recipes. This one is now on the top of my favorites list. I boiled my own shrimp and then ran them under cold water to cool, but you could buy pre-cooked shrimp and save a step. Either way, it was cool, fresh, beautiful, and delicious!
PREP TIME :
peeled and deveined
seeds and veins removed, diced
yellow bell pepper
kosher salt and pepper
Chop the shrimp and place into a medium sized bowl.
Add tomatoes, red onion, jalapeño, and bell pepper.
Toss to combine.
Juice the limes one at a time into the bowl. Taste as you go. If you like the tartness of ceviche, you’ll probably want to use both limes. Otherwise, one or one and a half will do.
Season with salt and pepper and add a dash or two of hot sauce.
Serve with tortilla chips
