You know you have a winner of a meal when your family is disappointed that there are no leftovers. So, if you're feeding a table of pasta lovers like me, maybe consider doubling the recipe.

Shrimp Sausage and Broccoli Penne with Alfredo Sauce

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 pound broccoli, cut into bite-sized pieces
  • 1/2 pound andouille sausage, cut into bite-sized pieces
  • 1 pound shrimp (medium), shelled and deveined
  • 1/8 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 1/4 cup butter
  • 1 clove garlic, minced or pressed
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 3 tablespoons fresh parsley, chopped

DIRECTIONS

  1. Cook pasta according to package directions. In the last few minutes, add broccoli.
  2. Drain pasta and broccoli and reserve about 1/2 cup pasta water.
  3. Heat olive oil in a heavy skillet over medium high heat. Once it begins to shimmer, add sausage and cook until well browned on all sides. Transfer to a plate.
  4. Add a bit more oil to the skillet if necessary and then add shrimp. Season with garlic salt and pepper and cook for 2-3 minutes or until shrimp are bright pink and firm. Transfer to the plate with the sausage.
  5. Heat remaining butter in the skillet. Once melted add garlic. Let cook for just a minute and then stir in cream and parmesan cheese.
  6. Let the sauce simmer for a couple of minutes to thicken. If it gets too thick, add a bit of pasta water to thin.
  7. Toss pasta and broccoli with the sauce and top with shrimp and sausage.
  8. Garnish with parsley and additional parmesan if desired.

NOTES

KID NOTE: Their plates were licked clean.

VEGETARIAN TIP: Skip the shrimp and sausage. Instead cook mushrooms until they are tender. Add broccoli and grape tomatoes and cook until the tomatoes burst. Toss with pasta and sauce.

GLUTEN MODIFICATIONS: Use brown rice pasta.
