The best way to cook a nice juicy pork chop is get a great sear on it and then transfer it to a hot oven. Thick cut bone-in chops work the best. And what I love most is the pan juices drizzled on top! Paired with simple lemony broccolini with crisp shallots and mashed new potatoes; thisĀ a meal worthy of a trendy steak and chop house!

Skillet Pork Chops

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 pounds pork chops (bone-in)
  • kosher salt and pepper, to taste
  • 1 tablespoon olive oil

DIRECTIONS

  1. Preheat oven to 350.
  2. Season pork with salt and pepper.
  3. Heat olive oil in a cast iron or oven-proof skillet over medium high heat.
  4. Once it begins to shimmer, add pork and let sear for a couple of minutes or until they are nicely browned.
  5. Flip pork and transfer to the oven. Cook for 10-15 minutes, depending on the thickness. The internal temperature should be at least 150 and might be a bit pink.
  6. Let rest for a few minutes and serve with pan juices.

Crispy Shallot Broccolini

INGREDIENTS

  • 1 shallot, cut into thin rounds
  • 2 tablespoons olive oil
  • 1 pound broccolini, trimmed
  • 1 lemon, juiced
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Place broccolini in a microwave safe dish. Add 1/2" water, cover, and microwave until bright green and crisp tender - about 2-3 minutes.
  2. Heat olive oil in a skillet over medium high heat until it begins to shimmer.
  3. Add shallot and cook until deeply browned and crispy.
  4. Drain and pat dry broccolini and add it to the skillet with the shallots. Cook just a minute or two.
  5. Drizzle with a bit of lemon juice, toss to combine, and season with salt and pepper to taste.

Mashed New Potatoes

INGREDIENTS

  • 1 pound baby new potatoes
  • 1/2 cup water
  • 1/4 cup whole milk
  • 2 tablespoons butter
  • kosher salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Quarter potatoes and place in a microwave safe dish.
  2. Add water and cover.
  3. Cook on high for 5 minutes. Remove from microwave and stir. Cook for another 5 minutes.
  4. Let sit covered for a few minutes, then drain the water.
  5. Use a potato masher and mash in milk and butter.
  6. Season with salt and pepper.
