Pull out the slow cooker! This is a fabulous sauce and it's packed with flavor!  If spaghetti with meat sauce is a favorite at your house like it is at mine, double the recipe. It keeps in the freezer for months. Our family prefers spaghetti, but I really like rigatoni. The holes grab onto the sauce! A few green beans or a side salad and you’re set!

Green Beans

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound green beans, trimmed
  • 2 tablespoons butter, optional
  • kosher salt and pepper

DIRECTIONS

  1. Place green beans in a pan, cover with water, bring to a boil, reduce to a simmer, and let cook about 3 minutes or until bright green and crisp tender.
  2. Drain water, add butter, toss to melt, and season with salt and pepper.

Slow Cooker Beef Bolognaise

SERVINGS : 4 PEOPLE COOK TIME : HOURS PREP TIME : MINUTES

INGREDIENTS

  • 2-3 slices bacon
  • 1 tablespoon butter
  • 1 cup onion, minced
  • 1 cup carrot, minced
  • 2 cloves garlic, minced
  • 1 pound ground beef, 80/20
  • 1/4 cup dry white wine
  • 28 ounces crushed tomatoes
  • 2 bay leaf
  • kosher salt and pepper
  • 1/4 cup heavy cream
  • 8 ounces spaghetti noodles

DIRECTIONS

  1. In a large pan, sauté bacon over medium heat for about 4-5 minutes. Add butter, onion, carrot, and garlic and cook until soft, about 5-8 minutes.
  2. Increase heat to medium high and add beef. Brown meat. Drain all in a colander in the sink.
  3. Place meat mixture in your slow cooker pot. Add wine, tomatoes and bay leaves. Stir to combine.
  4. Cook on low for about 6-8 hours. You cannot over cook this.
  5. Before serving remove bay leaves and stir in cream.
  6. Prepare pasta according to package directions.
  7. Spoon Bolognaise over pasta and serve.

NOTES

KID NOTE:  After they got over the fact that there were carrots in the ‘spaghetti sauce’, it was smooth sailing and clean plates all around!

VEGETARIAN TIP: Omit the beef and add a pound of chopped baby bella mushrooms.

GLUTEN MODIFICATIONS:  Use brown rice pasta.
