I've been making pulled pork in my slow cooker for years! You really can't beat the ease of cooking and the tender juicy meat! And there are a ton of different variations on flavors and vehicles. From good old barbecue and coleslaw, Sriracha BBQ, and Chili-Lime Aioli sandwiches, to a fair share of tacos! Tonight we're creating a new favorite with addition of pineapple! It's divine as a salad drizzled with cilantro-lime vinaigrette. Or, you can wrap it in a tortilla. It's up to you!

Slow Cooker Pineapple Pulled Pork and Pico Salad



  • 1 1/2 pound pork loin
  • 1/4 cup low sodium soy sauce
  • 1/2 cup chicken stock
  • kosher salt and pepper, to taste
  • 3 cups pineapple chunks
  • 4 cups baby mixed greens
  • Pineapple Pico
  • 2 roma tomato, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup red onion, minced
  • 1 jalapeno, seeded and minced
  • 2 tablespoons lime juice
  • Cilantro Lime Vinaigrette
  • 1/4 cup lime juice
  • 2 cloves garlic, minced or pressed
  • 1 teaspoon sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground coriander
  • 1/4 cup olive oil
  • 2 tablespoons cilantro, minced


  1. Add soy sauce and chicken stock to the bowl of a slow cooker. Stir to combine.
  2. Place pork loin in the slow cooker, sprinkle with salt and pepper, and top with 2 cups of pineapple.
  3. Cover and cook on low 7-8 hours.
  4. Transfer pork to a bowl. Drizzle with a bit of juices from the slow cooker and shred the meat with forks.
  5. Toss the remaining pineapple with the ingredients for the Pineapple Pico in a small bowl.
  6. Combine the ingredients for the Cilantro Lime Vinaigrette with a whisk or small food processor.
  7. Plate equal portions of greens. Top with shredded pork and pineapple, and Pineapple Pico.
  8. Drizzle with Cilantro Lime Vinaigrette.
  9. Serve.

KID NOTE: The kids skipped the greens and created soft tacos.

VEGETARIAN TIP: Instead of pork, roast pineapple in a 425 degree oven with sliced bell pepper, zucchini, and mushrooms until tender.

GLUTEN MODIFICATIONS: Use tamari instead of soy sauce.
