Meat and gravy and mashed potatoes is one of my family's favorite combinations. If it were up to me, I'd skip the potatoes. But, you decide. The smothered chops and crispy asparagus hit the spot for me!

Mashed Potatoes

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 4-5 potato, peeled and cut into 1” cubes
  • 1/2 cup whole milk, or a little more
  • 3 tablespoons butter
  • kosher salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Place potatoes in a pot and cover with water. Bring to a boil, reduce to simmer, cook for 10-15 minutes or until potatoes are fork tender.
  2. Drain water and return potatoes to pot.
  3. Mash with butter and milk.
  4. Season with salt and pepper

Smothered Pork Chops

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound pork chops (bone-in)
  • kosher salt and pepper, to taste
  • 1 onion, sliced into thick rounds
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced or pressed
  • 1 tablespoon olive oil
  • 1 cup beef stock
  • 1 cup beer
  • 2 tablespoons all-purpose flour

DIRECTIONS

  1. In a heavy skillet or cast iron, heat oil over medium high until it shimmers.
  2. Season pork chops with salt and pepper.
  3. Brown chops on one side, flip the chops and add onions, mushrooms, garlic, beef broth, and beer.
  4. Bring to a boil, reduce to simmer, cover and cook for 15 minutes or until the center of the chops are no longer pink.
  5. Remove chops and tent lightly with foil.
  6. In a small dish combine flour and about 1/2 cup of the pan juices.
  7. Pour the flour mixture into the pan, return to a simmer, and let thicken for a few minutes.
  8. Serve pork chops with mushroom onion gravy.

Parmesan Roasted Asparagus

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 pound asparagus, trimmed
  • 1/2 cup panko bread crumbs
  • 1/4 cup parmesan cheese, grated
  • 1 tablespoon olive oil

DIRECTIONS

  1. Preheat the oven to 400.
  2. Arrange asparagus in a single layer on a rimmed baking sheet.
  3. Drizzle with the olive oil.
  4. Sprinkle with panko and parmesan.
  5. Roast for 15-20 minutes or until tender.

NOTES

KID NOTE: The kids did great with this meal.

VEGETARIAN TIP: Replace the pork with a portabella mushrooms and omit the sliced mushrooms from the gravy.

GLUTEN MODIFICATIONS: Use cornstarch instead of flour and gluten free breadcrumbs.

    This meal was surprisingly easy to make. All 3 kids ate the asparagus:). My husband loved this meal…we will definitely make this again:)
