This somewhat sweet and and somewhat salty glaze is reminiscent of a teriyaki - but better. And, it's very simple to throw together. Be careful not to let the heat get too high and simmer away the sauce. If that happens add a little water and give it a stir. Then, drizzle the sauce on everything. YUM!

Soy-Glazed Salmon with Rice Noodles

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 8 ounces rice noodles
  • 1 pound salmon
  • 1/3 cup light brown sugar
  • 1/4 cup low sodium soy sauce
  • 2 teaspoons rice wine vinegar
  • 1 teaspoon olive oil
  • 1 teaspoon sesame oil
  • 2 tablespoons green onion, sliced

DIRECTIONS

  1. Cook rice noodles according to package directions and reserve.
  2. Combine brown sugar, soy sauce, and rice vinegar in a resealable bag or dish.
  3. Add salmon and let marinate about 30 minutes.
  4. Heat oils in a large skillet over medium high heat. Once the oils begin to shimmer, add salmon, skin side up.
  5. Cook for 3 minutes, flip and cook another 2 minutes.
  6. Add remaining marinade, and let simmer down for a minute or two.
  7. Plate rice noodles, place salmon on top, drizzle with pan sauce, and garnish with sliced green onions.

Sesame Snap Peas and Mushrooms

INGREDIENTS

  • 1 pound snap peas
  • 8 ounces mushrooms, stemmed and sliced
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Heat oils in a large skillet over medium high heat.
  2. When the oil begins to shimmer, add snap peas and mushrooms.
  3. Cook, stirring occasionally, until mushrooms are tender and snap peas are bright green and browned in spots - about 8 minutes.

NOTES

KID NOTE: The kids did great with the salmon, noodles, and snap peas. They pushed the mushrooms to the side; which I gladly took off their plates.

VEGETARIAN TIP: Replace the salmon with firm tofu.

GLUTEN MODIFICATIONS: Use tamari instead of soy sauce.

    REMEMBER to rinse the noodles – hubby didn’t and it glued together… but pouring the pan juices over the noodles was a fix!
