KID NOTE: The kids did great with the salmon, noodles, and snap peas. They pushed the mushrooms to the side; which I gladly took off their plates.
VEGETARIAN TIP: Replace the salmon with firm tofu.
GLUTEN MODIFICATIONS: Use tamari instead of soy sauce.
We loved everything about this dinner! My picky 9yo ate the salmon (well 1/2 the serving) without too much complaint! Perfect!

REMEMBER to rinse the noodles – hubby didn’t and it glued together… but pouring the pan juices over the noodles was a fix!
