Spiced Steak with Spanish Style Rice and Beans and a Simple Side Salad

The deep rich spices in both the steak rub and the rice and beans is wonderful. And, it makes for a comforting and hearty meal to end a long day. Dig in!

Southwestern Steak

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 4 teaspoons brown sugar
  • 2 teaspoons kosher salt
  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon pepper
  • 4 T-bone or ribeye steaks, or ribeyes

DIRECTIONS

  1. Combine sugar and spices and rub on both sides of the steaks.
  2. Grill steaks over medium high heat 3-4 per side or to your desired doneness.
  3. Or cook them inside: Heat 1 tablespoon olive oil over medium high heat in a heavy skillet. Sear on both sides, reduce heat, cover and let cook to your desired doneness.

Spanish Spiced Rice and Beans

INGREDIENTS

  • 1 1/2 cups jasmine rice
  • 3 cups chicken stock
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 14 ounces black beans, drained and rinsed
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Bring stock, cumin, and turmeric to a boil in a lidded pot.
  2. Add rice and beans, reduce heat to low, cover and let cook 20 minutes.
  3. Season with salt and pepper if necessary.

Cilantro-Lime Side Salad

INGREDIENTS

  • 3 cups baby mixed greens
  • 1/4 cup radish, thinly sliced
  • Vinaigrette
  • 1 clove garlic, minced or pressed
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/4 teaspoon kosher salt
  • 2 tablespoons cilantro, minced
  • 3 tablespoons olive oil

DIRECTIONS

  1. Combine viniagrette with a whisk and drizzle over greens and radish

NOTES

KID NOTE: Season one of the steaks with simple salt and pepper. The rice and beans are mild and were well received. Serve carrot sticks in place of the salad.

VEGETARIAN TIP: Skip the beef. Add sautéed vegetables to the rice and beans and serve with an egg on top.
