This is a GREAT appetizer! Perfect for a party or football watching! So easy to prepare, stores well in the refrigerator, and then heats up nicely before serving. Great with chips, pitas, crackers, and veggies.

Spicy Crab Dip

INGREDIENTS

  • 1 teaspoon olive oil
  • 1/4 cup onion, minced
  • 1 clove garlic, pressed
  • 1 tablespoon jalapeno, minced
  • 1/4 cup light beer
  • 1 cup heavy cream
  • 1/2 cup cream cheese
  • 1/2 cup gouda cheese
  • 8 ounces crabmeat, drained
  • 1 lime, juiced
  • 2 tablespoons green onion, chopped
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon cumin

DIRECTIONS

  1. In a large saucepan, heat olive oil until it shimmers. Add onion, garlic and jalapeno, and sauté until onion is translucent.
  2. Add beer and cook until liquid is reduced to half.
  3. Add cream and cheeses and stir until melted. Once melted, stir in crabmeat, lime juice, onions, cilantro, chili powder, salt and cumin.
  4. Transfer to a serving dish and serve hot with chips, tortillas, or pita.

NOTES

VEGETARIAN TIP: Replace the crab with 1 cup black eyed peas.

GLUTEN MODIFICATIONS: Use chicken stock instead of beer.

    This dip seems really runny. Would you suggest more cream cheese? The cream seems like a large amount.

    I agree it was too runny, but good. I would use less cream.
