Steak and Heirloom Cherry Tomato Salad

Steak and Heirloom Cherry Tomato Salad 5.00/5 (3 votes)

Gorgeous and delicious! This might just be my favorite salad yet this summer. The base is a classic combination of steak and tomatoes. Add a wonderful red onion vinaigrette, blue cheese, avocado, and a pinch of fresh dill, and you have a winner. (If you can't find heirloom cherry tomatoes, substitute chopped heirloom tomatoes.)

Steak and Heirloom Cherry Tomato Salad

  • 1 pound sirloin steak
  • kosher salt and pepper, to taste
  • 1/4 cup red onion, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tablespoon Dijon mustard
  • kosher salt and pepper, to taste
  • 8 ounces heirloom cherry tomatoes, halved
  • 2 avocado, cut into large pieces
  • 1/4 cup fresh dill, chopped
  • 6 cups baby spinach
  • 1/4 cup crumbled blue cheese, crumbled

  1. Preheat grill to medium high or a grill pan indoors.
  2. Season steak with salt and pepper.
  3. Combine red onion, vinegar, oil, mustard, salt and pepper in a large bowl and set aside.
  4. Grill steak 3-4 minutes per side or until cooked to desired doneness.
  5. Transfer to a cutting board and let rest at least 5 minutes.
  6. Slice into thin strips and transfer to the bowl with the vinegar and onions.
  7. Add tomatoes, avocado, and dill. Toss to coat.
  8. Plate spinach. Top with steak and tomatoes. Drizzle with remaining vinaigrette and garnish with blue cheese.
