Perfect for a weeknight and loaded with flavor. Pretty much everything you need in one bowl. Packed with meat, beans, corn, and just the right amount of spice. It’s nice and filling. But if you're worried about satisfying the heartier eaters at your table, a few simple quesadillas hit the spot.

Taco Soup

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound ground beef
  • 1 cup onion, diced
  • 4 ears corn, kernels removed
  • 15 ounces pinto beans, drained
  • 8 ounces tomato sauce
  • 14 ounces whole peeled tomatoes, undrained
  • 1 ounce taco seasoning
  • 4 cups chicken stock
  • 4 tablespoons sour cream
  • 2 green onion, sliced

DIRECTIONS

  1. Cook beef, onion, and corn kernels in a large pot.
  2. Once the beef is cooked through, drain any fat and return to the pot.
  3. Add beans, tomato sauce, tomatoes, and taco seasoning. Using a spoon, break the tomatoes into bite-sized pieces.
  4. Stir in chicken stock and let simmer for about 10-15 minutes.
  5. Ladle portions into bowls and garnish with sour cream and green onions.

Simple Cheese Quesadillas

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 8 flour tortillas
  • 3/4 cup cheddar cheese, grated
  • 3 tablespoons butter

DIRECTIONS

  1. Butter one side of each tortilla.
  2. Place 3T grated cheese on the un-buttered side of 4 tortillas.
  3. Heat a heavy skillet over medium high heat. Add the tortillas with the cheese, butter side down. Top with the other tortillas, butter side up.
  4. Brown for about 2 minutes, gently flip, and brown the other side until cheese is melted.

NOTES

KID NOTE: The kids did really well with the soup and gobbled up the quesadillas.

VEGETARIAN TIP: Omit the beef and increase the beans. Maybe add a chopped zucchini to the mix.

GLUTEN MODIFICATIONS: Use corn tortillas gluten free taco seasoning.
