The combination of rich curry and smooth coconut milk is delicious. You can add just about any seafood, meat, or vegetable; and create a dynamite dish. We're using shrimp, crisp snap peas, mushrooms, and fresh bell pepper. But, be creative and use what you have on hand. Note: Curry can be very spicy. So, use a bit and then adjust up.

Thai Red Curry Shrimp and Vegetables

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 14 ounces coconut milk
  • 2-3 tablespoons red curry paste
  • 1 tablespoon brown sugar
  • 1 pound large shrimp, peeled and deveined
  • 1 cup snap peas, cut in half lengthwise
  • 1 red bell pepper, chopped
  • 14 ounces straw mushrooms, or fresh sliced mushrooms
  • 1 tablespoon fish sauce
  • 1 lime, juiced
  • kosher salt, to taste

DIRECTIONS

  1. Heat coconut milk, curry paste, and brown sugar in a large pan over medium high heat.
  2. Once it comes to a low boil, let cook for about 5 minutes.
  3. Add shrimp and vegetables and cook for about 5 minutes or until shrimp is bright pink and firm.
  4. Stir in fish sauce and juice from half the lime.
  5. Adjust taste with additional lime juice and salt.

White Rice

SERVINGS : 4 PEOPLE COOK TIME : MINUTES

INGREDIENTS

  • 1 1/2 cups basmati rice
  • 3 cups water

DIRECTIONS

  1. Place rice and water in a small pot.
  2. Bring to a boil, reduce to a simmer, cover.
  3. Let cook for 20 minutes (if using brown, follow package directions for cooking time), remove lid, and fluff with a fork.

NOTES

KID NOTE: Go light on the curry to avoid the dish being too spicy for the kids.

VEGETARIAN TIP: Skip the chicken and omit the fish sauce. Add additional vegetables or tofu.

    My family enjoyed this meal! The only change I made was to stir fry the vegetables separately.
