We're heading into the home stretch of Christmas preparation! And if you're like me, you're still without small gifts for neighbors, teachers, and friends. Well, here you go. Beautiful and delicious and oh so versatile. I chose toasted coconut and roasted almonds - and it is amazing! My next batch will be dried cranberries and pecans. And I'm evening thinking about sea salt and melted caramels drizzled on top. The delicious possibilities are endless.

Toasted Coconut and Almond Chocolate Bark

SERVINGS : 12 PIECES PREP TIME : MINUTES PASSIVE TIME : HOUR

INGREDIENTS

  • 2 cups milk chocolate chips
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup salted almonds

DIRECTIONS

  1. Line a baking sheet with waxed paper or a silicone baking mat (Silpat).
  2. Heat a small pan on the stovetop over medium high heat.
  3. Add coconut and stir frequently until it is golden brown in spots. Set aside.
  4. Roughly chop nuts. Set aside.
  5. Pour chocolate chips into a microwave safe bowl.
  6. Microwave on high heat uncovered for 45 seconds.
  7. Remove and stir.
  8. Return to the microwave and cook on high 30 seconds.
  9. Remove and stir.
  10. Repeat until the chocolate is almost completely melted. Stir until the last of the chips melts.
  11. Pour the melted chocolate into the center of the prepared pan and smooth with a rubber spatula until it is about 1/4" thick.
  12. Sprinkle with coconut and almonds.
  13. Transfer to the refrigerator and cool until completely set - about an hour.
  14. Break into rough pieces and enjoy!
