Holy Deliciousness! This is absolutely fantastic! The combination of warm steak, cool watermelon, and tangy balsamic is delicious. It's wonderfully refreshing and light but hearty enough to fill your belly. But, a nice slice of warm buttered French bread would be a great addition.

Watermelon Basil and Steak Salad with Balsamic Vinaigrette

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 6 cups arugula
  • 2 cups watermelon, cubed
  • 1/2 cup feta cheese crumbles (or goat cheese crumbles), crumbled
  • 1/4 cup pepitas or sunflower seeds
  • 1/2 cup fresh basil, chopped
  • 1 pound New York Strip
  • Balsamic Vinaigrette
  • 1/4 cup balsamic vinegar
  • 1 teaspoons Dijon mustard
  • 1/2 teaspoon brown sugar
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon pepper
  • 1/4 cup olive oil

DIRECTIONS

  1. Preheat grill.
  2. Combine vinaigrette ingredients with a whisk.
  3. Season the steak with salt and pepper and then grill for 3-4 minutes per side or cooked to your desired degree of doneness.
  4. Let rest a few minutes and then slice into bite-sized pieces.
  5. Plate equal portions of arugula. Top with watermelon, feta, pepitas, basil, and steak.
  6. Drizzle with vinaigrette and serve.

NOTES

KID NOTE: Serve portions of watermelon, steak, and a few pepitas.  

VEGETARIAN TIP: Skip the steak. Consider adding chickpeas or navy beans.

    This was amazing! Used half spinach, half arugula and it was delish. Kids ate steak, watermelon, and devoured the pepitas! Served with some Ciabatta rolls.

    THIS WAS AMAZING!!!! I was skeptical. Heck, the whole family was skeptical! The combination of steak, basil, watermelon was so fresh and juicy and delicious….. half my family preferred no feta cheese, but I loved the saltiness it added. This is a favorite!
