Shallot Vinaigrette

INGREDIENTS
- ½ Tbsp. shallot, chopped fine
- 2 Tbsp. red wine vinegar
- ½ cup virgin olive oil
- ½ tsp. kosher salt
- ¼ tsp. pepper
DIRECTIONS
- Combine ingredients with a whisk or blender stick.
- Drizzle vinaigrette over your choice of greens and tomatoes and toss in a little feta.
