Southwestern Steak with a Balsamic Tomato, Green Bean and Potato Salad

Oh my! I’m a huge fan of steak, and the rub on this steak is outstanding. I chose a nice sirloin, but a ribeye or strip would work well too. It is delicious! And so is this salad! I could have eaten an entire plate of only salad and been very happy. The flavors in this meal work so well together. It’s such a nice diversion from the standard steak, potato, and salad rotation. And leftovers for lunch the next day is mighty tasty too!

 

Balsamic Tomato, Green Bean and Potato Salad

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound baby potatoes, cut into bite-sized pieces
  • 1 pound green beans
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 cup grape tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup basil, torn
  • 1/4 cup parsley, torn
  • 1/4 cup feta, crumbled

DIRECTIONS

  1. Place potatoes in a sauce pan. Cover with water.
  2. Bring water to a boil. Let cook until fork tender – about 10 minutes.
  3. Use a slotted spoon and transfer the potatoes to a large bowl filled half way with ice water.
  4. Add green beans to the boiling water and cook for just a few minutes or until bright green and crisp.
  5. Add them to the ice water with the potatoes.
  6. Drain the potatoes and green beans and return to the bowl.
  7. Drizzle with olive oil and vinegar.
  8. Add grape tomatoes, onion, basil, and parsley.
  9. Toss and garnish with feta.

INGREDIENTS

  • 4 teaspoons brown sugar
  • 2 teaspoons kosher salt
  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon pepper
  • 4 sirloins or other grilling steaks 

DIRECTIONS

  1. Combine sugar and spices and rub on both sides of the steaks.
  2. Grill steaks over medium high heat 3-4 per side or to your desired doneness.
  3. Or cook them inside: Heat 1 tablespoon olive oil over medium high heat in a heavy skillet. Sear on both sides, reduce heat, cover and let cook to your desired doneness.

NOTES

KID NOTE: A few modification for this meal. Season the kid steaks with salt only. Deconstruct the salad into undressed servings of potatoes, green beans, and tomatoes.

VEGETARIAN TIP: Skip the steak and bulk up the salad with additional potatoes and green beans.
